if life give you lemons, make lemon marmalade!

ADDA loves making jam, and this turned out to be one of his favorites.

did you know that most marmalades are bitter due to the oranges used in the jam. the BERGAMONT orange is bitter and used in English marmalades. BERGAMONT is also used in what other famous English product? (answer at end of the marmalade rant)

jamming is easy and the end product is so much better than anything one can purchase at the stores .

its all about the fruit. the fresher & stronger scented fruit will have a better taste. go ahead SNIFF your fruits before you purchase them !

the marmalade takes about 8 or 9 large oranges, & 1 or 2 lemons...scrub & wash them...

with a veggie pealer, peal the skins off the oranges and lemon very thinly.

then cut the strips into very small slices.

place in 2 1/2 cups water with 1/8 teaspoon baking soda....cook for 20 minutes.

squeeze the juices out of the lemons and oranges with an autojuicer or by hand which then you have to strain the seds and pulp out.

add the juice to the peels...

add pectin to mixxture. (purchase boxed pectin...use the lower sugar content...the regular pectin will take twice as much sugar and taste exceedingly sweet)

make the mix come to a roiling boil that one cannot stop by stirrring.

add 4 cups of sugar....stir and bring back to roiling boil...let boil for several minutes...

then pour the liqued HOT marmalade into hot clean jars (best to use canning jars and lids...but if you use your used jars & lids, make sure to refrigerate the jam and NOT store in the cubboard)

MARMALADE takes a week or so to set...but we usually dig in right away...

its super'll never go back to store bought jam.

(oh, the other English product that uses BERGAMONT ORANGES...why that's the main ingredient in EARL GREY TEA...)

Best Friends

I have very few people photos in my stream but I loaded this one for the Best Friends category of the February Monthly Scavenger Hunt. This is a picture of my mother and our best friend that we share. A couple of months before my father passed away in 1989 Marilyn and her husband moved in across the street from my parents and the 4 became instant friends. After my fathers death Marilyn and her husband became my mother's guardian angel. They were her saviour in her time of deep sorrow. When my mother's health began to go down hill they were still there picking up her mail for her, taking her shopping, to appointments, shovelling snow and cutting grass. One summer my mother's health really started going down hill even further, they checked on her daily and Marilyn even cooked meals and delivered them to her every day. My mother then needed to go to a senior's lodge and Marillyn's husband became ill and passed away within a few months. Marilyn sold her home and moved but they still have remained very close friends by phone and I am also proud to call her one of my dearest friends as well. She has become family to me and I am also an honorary member of her family. She is one of the generous, giving people I know and friend to all she knows. Everyone should be as lucky to have a friend liker. I know this is not a great photo but the meaning of love and friendship behind makes it a very treasured one.
